I've never been a fan of beets (especially with small children who get pink EVERYWHERE!) but this week in the supermarket, they were one of very few veggies that looked nice, so I bought some and made this soup for Shabbat.

I made it and received compliments and requests for the recipe from my guests. You may have a couple of new followers soon!

THis looked so good that I made it for dinner tonight, even though it breaks my one pot rule: never make anything that gets more than one pot dirty.
I did cover the beets with aluminum foil, but they crunchy on the edges anyway.
I didn't have cumin seeds, so I used ground cumin instead.
Freash ginger is amazing - the ground stuff can't compare.
I used water and have a stick blender and blended it in the pot.
I plan on serving it with 9\% sour cream.

It tastes really yummy - I love beets - I hope everyone else likes it.

Baking the beets is a lot of work - do you think it would work with boiled beets?

Robin, I can't see why you couldn't toast cumin in the same pot, even if it's a "sticky" one. What do you usually put in the quiche?

This sounds good, much better than borscht (I'm another confirmed no thank you person). I think I'll skip roasting the seeds though, I don't think it adds enough to justify the smoky smell or dirty pan.

PS We love your crustless quiche, I make it often.
