		<description>Leah, I make a very low maintenance stock with what I have wasting away in the fridge: celery tops, a couple of carrots, a sad potato, an onion, leftover parsley, stray mushrooms, etc. Add a few quarts of water, boil and simmer for at least an hour, strain. I don&#039;t salt anything until a finished soup is in its final stage.

(PS In America I usually used boxed organic broth.)</description>
