Vegetarian Nut Loaf

walnut for vegetarian nut loafAn easy vegetarian recipe. You could make it in the microwave, but you would need to soften the onions first for about five minutes on high before adding the other incredients. You could make it gluten free by substituting rice flour for the crumbs.

Instructions:

  1. Mix all ingredients except tomato sauce.
  2. Spoon into oiled loaf pan.
  3. Bake at 350 degrees for 30 minutes.
  4. Five minutes before removing from oven, cover loaf with tomato sauce.

Serves 4.

Just a note:
One year I tried this with grated carrot that was not pre-cooked & it did not work.
